What is boba?
Boba are tapioca pearls: small, chewy balls made from cassava starch and simmered in brown sugar syrup. They sit at the bottom of the cup and come up the wide straw with every sip.
Pearls go hard if they sit, so ours are cooked on the truck every morning and a fresh pot goes on every four hours.
