Mornings

Natural leaven, long proofs and butter folded by hand

Every loaf starts the day before with our own starter and rises slowly overnight, which is where the flavor and the crackling crust come from.

Pastry is laminated in the cool hours before sunrise. The list is short on purpose: what we can bake well every day and sell the same morning.
